For those of us who have simplified our lives or are budget conscious or just don’t eat meat, these humble legumes are delicious, economical, and a great source of protein and fiber. Whether you grow your own or buy from your local farmer’s market, you'll be on a pathway to healthy bodies and healthy budgets.

Growing them is wonderfully easy. From the magic of a
single seedling in a child’s first garden to an urban patio
garden and on to a few acres
of pintos for a farmer’s market, plants need the same
essentials: sun, soil, and water.

Sunshine and water are pretty much the same anywhere; only quantities needed by your
plants will vary. But you can learn to create soil that your plants will love with tips on composting and cultivating.
